Yummy and easy to make noodles
Though I have used chicken here you can skip that and make it all vegetarian .
Ingredients
1 packet chow mein noodles (boiled, drained in cold water and tossed in 2 tsps oil)
Boneless skinless chicken breast cut into thin slices
Hand full of each kind julienne vegetables green beans, carrots, cabbage and bell pepper 1tsp tsp soya sauce
1 tbsp ginger garlic crushed
Thai green peppers 1 or more if u like it spicy 1/2 tsp freshly ground black pepper salt as required
1 1/2 vegetable or canola oil
1 tbsp white part of scallions finely chopped for stir fry and green parts to garnish .
1 Heat enough water in a pan .when the water comes to a boil, add the noodles.stir and allow to cook the noodles till they are just cooked or al dente.once the noodles are done, drain them in a colander and rinse in under cold tap water .
Apply 1teaspoon oil to the noodles mix gently and keep aside.
2 heat oil in a wok or pan add the chicken strips and stir fry till done , once done pull it out and keep aside .
3 Add the garlic , ginger, Thai pepper and stir fry on medium flame for a few seconds increase the flame to high & add white part of the scallions onions. add the veggies – carrots, capsicum and french beans. Add cabbage and continue to toss & stir fry on a high flame till the veggies are almost cooked but not mushy . They should still have a bit of crunch .
4 add the soy sauce, salt and pepper and stir, add the noodles and chicken .keep on tossing and stirring till mixed well .
5 Garnish with green part of scallions and serve .
